
Meet Gonzalo
Buenos Aires-born chef and baker Gonzalo Guarda has built his career around food, craft and the people behind them.
From Argentina to Europe and eventually Copenhagen, his journey has taken him through some of the city's most influential kitchens and bakeries, including Noma.
Along the way, cooking evolved into a fascination with fermentation, bread and the possibilities of working closely with ingredients, seasons and the people who produce them.

Coming from the energy and chaos of Buenos Aires, Gonzalo found something completely different in Copenhagen: silence, balance and a slower, more grounded way of living.
Seventeen years later, the city has become home. Its international community of chefs, bakers, farmers and makers continues to push him forward, while its simplicity has shaped the way he approaches both food and life.
For Gonzalo, travelling is about remaining open, to people, cultures and the unexpected places they can take you.
